Beer Butt Chicken

Ingredients
  

  • 1 Large can of beer, half empty with ring pull removed.
  • 4 cloves garlic rushed
  • Melted butter or olive oil for brushing
  • 1 whole chicken (weighing around 4 lbs)
  • Carolina BBQ Rub (see Recipe on website) as needed

Instructions
 

  • Place garlic in half empty beer can, brush beer can with butter or oil and set aside.
    Brush Chicken with butter or oil and coat with BBQ rub inside and outside – slide the chicken over the beer can so that the can is inside the bird and the bird sits upright on the can (ouch)!
    Place the chicken with beer can upright on a flat surface (roasting tray) onto the BBQ (smoker grid).
    Have the BBQ setup for indirect heat, we prefer hickory chips, well soaked, included at the beginning of cooking.
    Cooking takes approximately 21/2 to 3 hours but we suggest you use a meat probe to ensure correct temperature, else ensure juices run clear before you remove from the BBQ.
    Remember smoked chicken will have a pink ring in the meat, which is known as a smoke ring and is perfectly normal.
